This Scandinavian lunchtime favourite combines the tartness of apple with the rich oniony taste of pickled herrings, and lashings of creamy cheese.
- 4 slices crispbread
- 200 g Matjes preserved herrings
- 8 – 10 boiled new potatoes
- 1 apple sliced thinly
- 250 ml natural quark (or substitute with fromage frais, ricotta or vegan cream cheese)
- 100 – 150 g grated Västerbotten cheese (or subtitute with sharp cheddar)
- 25 g browned melted butter
- fresh grated horseradish
- fresh dill.
- Mix the quark and Västerbotten.
- Arrange the crispbreads on four separate platters.
- Layer the toppings in the following order: cheese mix, potato slices, apple slices, herring and horseradish.
- Drizzle with the browned butter and garnish with dill to serve.
