Open sandwich with Matjes herrings

This Scandinavian lunchtime favourite combines the tartness of apple with the rich oniony taste of pickled herrings, and lashings of creamy cheese.


  • 4 slices crispbread
  • 200 g Matjes preserved herrings
  • 8 – 10 boiled new potatoes
  • 1 apple sliced thinly
  • 250 ml natural quark (or substitute with fromage frais, ricotta or vegan cream cheese)
  • 100 – 150 g grated Västerbotten cheese (or subtitute with sharp cheddar)
  • 25 g browned melted butter
  • fresh grated horseradish
  • fresh dill.
  1. Mix the quark and Västerbotten.
  2. Arrange the crispbreads on four separate platters.
  3. Layer the toppings in the following order: cheese mix, potato slices, apple slices, herring and horseradish.
  4. Drizzle with the browned butter and garnish with dill to serve.
