High Protein, Creamy Porcini Mushroom Pasta (Vegan/Non-Vegan)

Are you looking for a quick go-to dish that not only tastes good but is also gluten-free, and high in protein? Nutritionist Tamika Woods (@nourishednaturalhealth) has developed this delicious pasta dish.


1 Large Onion, diced
2 Garlic Cloves, peeled and crushed
1 Tbsp Coconut or olive oil
1 Cup Viking Platter Dried Wild Porcini
1 Head of Broccoli, cut into small pieces
1 Cup Coconut Cream
1 Tbsp Tamari or Soy Sauce
1 Tbsp Dijon Mustard
1 Packet Gluten Fee Pulse Pasta

Optional: ½ cup Crumbled Viking Organic Goat / Sheep Cheese (Feta Style) (for a non-vegan version!)

  1. Add dried mushrooms to a small bowl and cover with around 1 cup of boiling water. Set aside to soak
  2. Heat a large fry pan over medium heat and add the coconut or olive oil
  3. Add onion and garlic and fry, stirring occasionally for 2-3 minutes or until onion is translucent
  4. Add mushrooms (including the soaking water), broccoli, coconut cream, tamari and mustard and stir to combine
  5. Simmer over low heat until broccoli is tender
  6. Meanwhile, bring a medium saucepan of water to boil and add pasta. Cook following packet directions
  7. Drain pasta and serve topped with creamy mushroom sauce, a drizzle of olive oil and handful of crumbled feta (if using)

PRO TIP

If you want, you can take out the pasta 1min before the stated cooking time, and add the drained pasta directly to the sauce. The heat and liquids from the sauce will keep cooking through the pasta and the pasta will soak up some of the juices from the sauce
