Banana Cinnamon Oats with Wild Blueberry Sauce

A delightfully quick, easy and delicious breakfast that is decadent yet balanced perfectly on the palate.


Oats

  • 1 Cup of Quick Oats
  • 1 Banana (mashed)
  • 2 Tbsp Chia Seeds
  • 2 Cups of Oat Milk
  • 1tsp Cinnamon
  • 1tsp Vanilla Bean Paste

Wild Blueberry Sauce

  • 1 Cup of Frozen Viking Organic Wild Blueberries
  • 3 Tbsp of Maple Syrup
  • 2 Tbsp of water

To Serve

  • Coconut Yoghurt
  • Shredded Coconut

You will need: 2 small to medium sized saucepans

Oats

Put all the oats ingredients in the saucepan on medium heat and stir continuously until the oats are thick and creamy. This should take about 4-6mins.

Wild Blueberry Sauce

Meanwhile in the other saucepan, place on low to medium heat and place in the Wild Blueberries, Maple Syrup and water and stir occasionally until the sauce slightly thickens and is fully warmed up.

Toppings

To serve, place the oats in a bowl, and drizzle the Wild Blueberry sauce over the oats.

For a creamy texture, you can decorate with a dollop of coconut yoghurt on top with some shredded coconut for added texture.
